Ingredients

 

Crust

  • 1/4 cup sugar
  • 1/4 tsp salt
  • 3/4 cup coconut
  • 6 Tbsp butter
  • 2 Tbsp water
  • 1/2 cup flour

 

Filling

  • 3/4 cup sugar
  • 2 eggs
  • 1/4 cup lemon juice
  • 1 tsp-2 Tbsp flour
  • 1/2 tsp baking powder
  • a pinch of salt
  • 1/2 cup coconut

 

Instructions

  1. Mix crust ingredients together.
  2. Press into a 9×13 pan.
  3. Bake at 350°F until crust is golden (about 25 minutes).
  4. Mix filling ingredients together.
  5. Pour filling over hot crust.
  6. Return to oven and bake until filling is golden (about 30 minutes).
  7. Let bars cool completely before serving.
