Ingredients
Crust
- 1/4 cup sugar
- 1/4 tsp salt
- 3/4 cup coconut
- 6 Tbsp butter
- 2 Tbsp water
- 1/2 cup flour
Filling
- 3/4 cup sugar
- 2 eggs
- 1/4 cup lemon juice
- 1 tsp-2 Tbsp flour
- 1/2 tsp baking powder
- a pinch of salt
- 1/2 cup coconut
Instructions
- Mix crust ingredients together.
- Press into a 9×13 pan.
- Bake at 350°F until crust is golden (about 25 minutes).
- Mix filling ingredients together.
- Pour filling over hot crust.
- Return to oven and bake until filling is golden (about 30 minutes).
- Let bars cool completely before serving.
