Excellent side dish, especially with fresh corn!
Yield: 4-6 servings
- 2 T. oil
- 3 C. cooked fresh corn kernels (approximately 6 ears)
- 1 medium onion, chopped fine
- 4 slices bacon, cooked and crumbled
- pinch of dried hot red pepper flakes
- Heat the oil in a skillet over medium high heat.
- Sauté the corn and onions, stirring, for 1 minute.
- Stir in the bacon and red pepper flakes and sauté for 15 seconds.
