Excellent side dish, especially with fresh corn!

Yield: 4-6 servings



    • 2 T. oil
    • 3 C. cooked fresh corn kernels (approximately 6 ears)
    • 1 medium onion, chopped fine
    • 4 slices bacon, cooked and crumbled
    • pinch of dried hot red pepper flakes



  1. Heat the oil in a skillet over medium high heat.
  2. Sauté the corn and onions, stirring, for 1 minute.
  3. Stir in the bacon and red pepper flakes and sauté for 15 seconds.
