Applesauce Spice Cake with Honey-Whipped Cream

When I was 7 years old, I absolutely adored spice cake and requested it for my birthday. This one is like my childhood favorite, all grown up with a molasses glaze and Honey-Whipped Cream.

 

Yield: Serves 8

 

Ingredients | Cake:

  • 1 2/3 C. (200 g) flour
  • 1 tsp. baking soda
  • 2 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1/4 tsp. ground cloves
  • 1/2 tsp. ginger
  • 1/4 tsp. salt
  • 1/2 C. (115 g) butter
  • 3/4 C. (185 g) sugar
  • 2 T. molasses
  • 2 tsp. vanilla
  • 1 egg
  • 1 C. (250 ml) applesauce

 

 

Ingredients | Glaze:

  • 2 T. butter
  • 1 C. (250 ml) applesauce
  • 2 T. molasses
  • 4 T. whole milk or light cream
  • 1 tsp. vanilla
  • pinch of salt

 

 

Ingredients | Honey Whipped Cream:

  • 2-4 C. (200-600 ml) heavy cream, chilled
  • 2-3 T. honey

 

 

Instructions

Cake:

1. In a bowl, mix together the flour, soda, and spices.

2. In a separate bowl, cream the butter until softened; add the sugar, molasses, and vanilla; beat until smooth.

3. Add the egg and continue beating until light and fluffy, about 3-4 minutes.

4. Add the dry ingredients and gently incorporate. Add applesauce; mix until smooth.

5. Spread the batter in a greased 9-inch (23 cm.) cake pan and bake at 350° F (180° C) for 30-40 minutes or until a toothpick comes out clean.

6. The cake can be served warm or at room temperature. Drizzle the glaze over each piece as you serve it and top with Honey Whipped Cream.

 

Glaze:
1. Combine glaze ingredients in a small saucepan and bring to a boil, stirring constantly.

2. Simmer gently for 3-4 minutes over medium high heat, stirring often. Set aside to cool.

This will thicken slightly as it cools. If you make it ahead, you may prefer to warm it just before serving.

 

Honey Whipped Cream:

Whip the cream in a chilled bowl until dense. Gradually add the honey as you continue to beat until stiff.
