Salad Greens with Pears & Walnuts

This lightly-sweetened salad is refreshing and delicate. If you prefer, you can use apples instead of pears

 

Yield: 8 servings

 

Ingredients

Sweet Salad Dressing

  • 1/4 C. (65 g) sugar or Splenda
  • 1/2 tsp. salt
  • 1/2 tsp. dry mustard
  • 1/2 tsp. paprika
  • 1/2 tsp. dry or grated onion
  • 1/2 C. (65 ml) vegetable oil
  • 2 T. white vinegar

 

Salad Fixings

  • 10-12 C. mixed salad greens
  • 5 large pears, chopped into 1-inch (2.5 cm.) pieces
  • 1 1/2 C. (200 g) walnuts, lightly toasted, if desired

 

Instructions

1. Combine dressing ingredients in a jar and shake well to combine. (Or place in a bowl and whisk together.)
2. When ready to serve, combine greens, pears, and nuts. Pour some of the dressing over the salad and toss. You will not need all of the dressing. Store in a cool place.
