Ingredients

  • 1/2 C. (125 ml) wine vinegar
  • 1/2 C. (125 ml) olive oil
  • 1/2 tsp. oregano
  • 1 clove garlic, minced
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. brown sugar
  • 1 T. lemon juice
  • 1 tsp. prepared mustard
  • 2 tsp. dried parsley flakes
  • 1 small onion, finely sliced
  • 1 lb. (500 g) fresh mushrooms or 1-2 cans artichoke hearts, drained

 

Instructions

Combine all ingredients except mushrooms or artichokes in a small saucepan and bring to a boil. Cool. Add mushrooms or artichokes to cooled marinade and refrigerate in a tightly covered bowl overnight.
