Ingredients

    • 2 T. flour
    • 1/4 tsp. nutmeg
    • 1/8 tsp. salt
    • 3/4 C. (185 g) sugar
    • 1 unbeaten egg
    • 1 C. (200 g) sour cream
    • 1 tsp. vanilla
    • 2 C. diced apples or peaches (2-3 large)
    • 1 (9-inch/23 cm) unbaked pastry crust (p. 210)

Topping

  • 1/3 C. (75 g) sugar
  • 1/3 C. (40 g) flour
  • 1 tsp. cinnamon
  • 1/4 C. (55 g) butter, softened

Instructions

  1. Sift together the flour, salt, nutmeg and sugar. Add and blend the egg, sour cream, and vanilla.
  2. Stir in the apples; pour into the unbaked pastry crust.
  3. Bake for 15 minutes at 400° F (200° C). Reduce heat to 350° F (180° C) and bake for 35 minutes.
  4. Meanwhile, combine the topping ingredients until crumbly. Sprinkle over the pie; increase the oven heat to 425° F (220° C) and bake 10 minutes more.
